If fajitas are on the menu whenever Brad and I go out to eat, most likely they will end up at our table; they are always so delicious. This past weekend, I decided to make some fajitas at home (and I’m glad that we made extras because they were AWESOME for leftovers too). My parents were coming over for dinner to drop off a couple items and these fajitas were a huge hit. I am always a fan of dinners that are easily customized for each person. Fajitas fit this as each person can add the exact toppings that they want.
Easy Summer Fajitas
Brad grilled up some delicious flank steak that was perfect to slice into strips for the fajitas. We also had caramelized onions & peppers, guacamole, and black beans. I also included a bit of cheese and sour cream for those of us who enjoy dairy. The hardest part when making these is to not over-stuff the tortilla. I’m sure I’m not the only one who likes to add way too many toppings and then has issues getting the tortilla to close.
Did you know that Bush’s Best features more than just baked beans? They have a wide variety such as black beans, garbanzo beans, kidney beans, and just about any other bean you may want. They are available at Walmart for your shopping convenience as well. We always have a few cans of beans in the pantry because they are so easy to add into recipes. During the winter we use them for stew or chili, and during the summer beans are used in my summer avocado salad, tacos, or added to a dinner salad.
Brad and I will definitely be having more fajitas this summer; the ingredients are a combination of ones that we keep in the pantry, and easy ones to pick up on the way home from work, and can be made in less than a half hour!

One of my faves with these black beans are cubed baked sweet potatoes (sprinkled with chipotle powder) in a wrap with avocado, cilantro and lime all blended together and poured on top. SO GOOD!
