Dairy Free Tomato Coconut Soup

Dairy Free can still be creamy! This Dairy Free Tomato Soup is absolutely delicious
Ingredients
  • 4 pounds vine ripened tomatoes
  • 1 Tablespoon olive oil
  • 1 medium onion - chopped
  • 1 Tablespoon minced garlic
  • 2 Tablespoons sugar
  • ¼ cup chopped basil
  • 3 cups vegetable stock
  • 1 Tablespoon salt
  • 2 teaspoons ground pepper
  • 1 can coconut milk (make sure to use the can, you want the higher fat content)
  • 2 cups hemp milk
Instructions
  1. Place the tomatoes in boiling water for 90 seconds and then directly into ice water for 90 seconds. After this blanching, the skin should peel right off.
  2. Heat the olive oil in a pan and then saute the onions and garlic for 10 minutes.
  3. In a large sauce pan, combine all of the remaining ingredients in addition to the tomatoes and sauteed onions. Simmer all of the ingredients for ½ hour or until the tomatoes are tender. Using both hemp and coconut milk gives the soup a creamy texture without it having an overpowering coconut flavor.
  4. Scoop in some of the mixture and puree on high until smooth (it took mine just about 10-15 seconds per "batch"). Remember that this liquid was just boiling so be careful filling the bowl of the food processor.
  5. To enjoy later, simply reheat over low until it is nice and warm. Top with some fresh basil and croutons.
