Soft Rhubarb Cookies

Enjoy delicious rhubarb with these soft and chewy cookies.
Ingredients
  • 1 cup shortening
  • 1½ cup brown sugar
  • 2 eggs
  • 1½ cup flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 cups chopped rhubarb
Instructions
  1. Cream together the shortening and brown sugar
  2. Beat in the eggs
  3. Slowly add the dry ingredients
  4. Fold in the rhubarb
  5. Place on a cookie sheet 2" apart
  6. Bake at 350 for 12 minutes or until lightly brown
