Creamy & Dairy-Free Sweet Potato Casserole
You can easily enjoy creamy sweet potato casserole without any added dairy. Even dairy lovers will enjoy this casserole!
  • 4 large Sweet Potatoes, peeled and cut in quarters
  • 2 teaspoons salt
  • Water to Fill the Pot
  • 4 Tablespoons Dairy Free Margarine
  • 6 ounces Dairy Free Sour Cream (I use Tofutti brand)
  • ½ Cup Brown Sugar
  • 2 Tablespoons Ground Cinnamon
  • 1 Tablespoon Ground Nutmeg
  • 1 Bag Mini Marshmallows
  1. Fill a large pot with water
  2. Add in the salt and sweet potatoes
  3. Bring to a boil, and cook until they are easily pierced by a fork
  4. Once cooked, use a slotted spoon to transfer the potatoes into a stand mixer (with the whisk attachment)
  5. Whisk on low until the potatoes are broken up
  6. Add in the margarine, sour cream, and brown sugar
  7. Whisk until smooth
  8. Whisk in the ground cinnamon and nutmeg
  9. Pre-Heat the oven to 350*
  10. Spoon the potatoes into a sprayed baking dish
  11. Top with mini marshmallows
  12. Bake for 20-30 minutes, or until the marshmallows are golden brown
