Creamy & Dairy-Free Sweet Potato Casserole
- 4 large Sweet Potatoes, peeled and cut in quarters
- 2 teaspoons salt
- Water to Fill the Pot
- 4 Tablespoons Dairy Free Margarine
- 6 ounces Dairy Free Sour Cream (I use Tofutti brand)
- ½ Cup Brown Sugar
- 2 Tablespoons Ground Cinnamon
- 1 Tablespoon Ground Nutmeg
- 1 Bag Mini Marshmallows
- Fill a large pot with water
- Add in the salt and sweet potatoes
- Bring to a boil, and cook until they are easily pierced by a fork
- Once cooked, use a slotted spoon to transfer the potatoes into a stand mixer (with the whisk attachment)
- Whisk on low until the potatoes are broken up
- Add in the margarine, sour cream, and brown sugar
- Whisk until smooth
- Whisk in the ground cinnamon and nutmeg
- Pre-Heat the oven to 350*
- Spoon the potatoes into a sprayed baking dish
- Top with mini marshmallows
- Bake for 20-30 minutes, or until the marshmallows are golden brown
