Enjoy some Pineapple upside down cake, without the gravity defying acrobatics. These cupcakes are absolutely delicious and reminiscent of the yummy cake.
Ingredients
1 Box White Cake Mix
1 Cup Pineapple Juice
⅓ Cup Vegetable Oil
3 Eggs
1 teaspoon vanilla extract
2 Tablespoons brown sugar
Vanilla Frosting
Pineapple Chunks
Maraschino Cherry
Instructions
Preheat the oven to 350*
Put a cupcake liner in each slot of the cupcake pan
Drain can of Pineapple Chunks, reserving juice
Combine the cake mix, pineapple juice, oil and eggs in a large mixing bowl
Mix on medium until smooth
Mix in the vanilla extract and brown sugar until smooth
Put 3 Tablespoons of mixture into each cupcake liner
Bake for about 15 minutes, or until golden brown and a toothpick comes out clean
Cool
Frost & garnish with a pineapple chunk and cherry
