Pineapple Upside Down Inspired Cupcakes

Enjoy some Pineapple upside down cake, without the gravity defying acrobatics. These cupcakes are absolutely delicious and reminiscent of the yummy cake.
  • 1 Box White Cake Mix
  • 1 Cup Pineapple Juice
  • ⅓ Cup Vegetable Oil
  • 3 Eggs
  • 1 teaspoon vanilla extract
  • 2 Tablespoons brown sugar
  • Vanilla Frosting
  • Pineapple Chunks
  • Maraschino Cherry
  1. Preheat the oven to 350*
  2. Put a cupcake liner in each slot of the cupcake pan
  3. Drain can of Pineapple Chunks, reserving juice
  4. Combine the cake mix, pineapple juice, oil and eggs in a large mixing bowl
  5. Mix on medium until smooth
  6. Mix in the vanilla extract and brown sugar until smooth
  7. Put 3 Tablespoons of mixture into each cupcake liner
  8. Bake for about 15 minutes, or until golden brown and a toothpick comes out clean
  9. Cool
  10. Frost & garnish with a pineapple chunk and cherry
