I see a lot more breakfast-for-dinner meals in our house in the coming months. This afternoon, while waiting for my milk to cool for homemade yogurt I mixed together the ingredients for homemade pancake mix. I got one of the OXO Pop Containers to hold the mix and taped the ingredients and directions to the back for refilling the container. We still have a good amount of frozen and canned fruit from this past summer that will be great on top of pancakes or inside crepes.
Below are the directions to make your own pancake mix:
Mix Ingredients:
- 6 cups whole wheat flour
- 2 cups cake flour
- 2 cups dried milk (2 packets = 2 cups)
- 1/2 cup sugar
- 3 T baking powder
- 1 1/2 T baking soda
- 2 t salt
To Make:
- 2 cups of Mix
- 1 1/2 cups of Water
- 1 egg
- 2 T of oil
- 2 t of vanilla extract
Breakfast for Dinner isn’t complete without a mimosa. We had a bottle of champagne left over from New Years Eve so it was a perfect addition to the pancakes, eggs and bacon.
