Its fall time and everything around is pumpkin flavored. A couple nights ago I decided to jump on the pumpkin train and make some cookies. I don’t remember where I got the recipe from originally; it was written down in my recipe box.
Ingredients:
- 1/2 cup butter
- 1 cup brown sugar
- 1 cup pumpkin (I used the puree I made a couple weeks ago)
- 1 egg
- 2 teaspoons cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 3/4 cup raisins (I was all out so these were raisin free)
- 1 cup all purpose flour
- 3/4 cup wheat flour
- 3/4 cup pecans (optional)
Directions:
- Melt butter for 30 seconds
- Add all ingredients except for the wheat flour, raisins and nuts
- Beat thoroughly
- Stir in wheat flour, raisins and nuts
- Bake at 375 degrees for 10-12 minutes
- Let cool then add glaze
Glaze:
- 1/4 cup butter
- 2 cup powdered sugar
- 1 1/2 teaspoon vanilla extract
- 2 Tablespoon milk
Melt butter then mix in other ingredients
