I’ve shared a few different fig recipes this year, but today’s might be my favorite. I didn’t count how many we harvested, but it wouldn’t surprise me if we picked over 500 figs off of our tree this year. I discovered that people either have a love or hate reaction to figs, there is no in between. I brought a bunch to work and a few people lucked out by getting to take the entire bag home.
This summer, I discovered that I really like figs when they are grilled. It softens up the skin and makes them a little bit sweeter. I was trying to think of how I could make them a little bit more exciting and decided to pair them with one of my favorite foods – cheese!
- Fresh Figs
- Brie or other soft cheese
- Stab the figs lengthwise with a bamboo skewer
- Grill until softened
- Slice the top in quarters
- Add a chunk of brie or other soft cheese into the center of the fig
- Enjoy!
I use soft cheese for this recipe because that will help it melt a bit into the fig. I really like brie so it is always my go-to soft cheese, but really you could pick up whichever one is your favorite.
Everybody keeps asking what type of figs we are growing because they are surprised when they are bright green when ripe as opposed to brown or purple. Honestly, I have no idea! The tree was in our front yard was already there when we moved into our house and it actually took us a couple years to figure out what sort of fruit it was growing.
Making these cheese stuffed grilled figs are sooooo easy! Plus I have a little secret to make them even easier – the HomeRight ElectroLight Fire Starter! I’ve shared earlier this summer how we have used this fire starter to make campfires easier to start, but it can also be used on a charcoal grill! Simply point the hot air at the briquettes and get the fire going. The ElectroLight keeps the hot air (1300 degrees hot) blowing onto the charcoal so the grill can get hotter faster than normal; plus you don’t even need to use lighter fluid!
I’m hoping that the second batch of figs ripen on the tree so that I can make some more of these this summer. Our tree has another couple hundred figs on the tree; but we need some more warm weather to help them ripen (hopefully this weekend’s sunshine will be enough). Will have to try this… take a flatbread, pre-crisp it for minute on grill or oven grate. top with caramelized onions ,sliced figs, and cheese of your choice. we have used feta & or goat crumbles. bake or grill till cheese gets gooey. cut into pieces with a pizza cutter.
