Renee has been making marshmallows for years and could basically do it with her eyes closed. Earlier this weekend, I wanted to make some yummy peppermint marshmallows so while her and Kevin were over we decided to make a batch. These marshmallows are super easy and absolutely delicious. Side note: don’t try making too many batches at once or you will start getting lazy and then the later batches won’t turn out as well (we learned that a couple years ago when we tried making 7 batches in one day).
Easy & Delicious Peppermint Marshmallows
- 1 cup Powdered Sugar
- 3½ packets unflavored gelatin (just estimate the ½ packet)
- ½ cup Cold Water
- 2 cups Granulated Sugar
- ½ cup light corn syrup
- ½ cup Hot Water (I just waited for the sink to get hot)
- ¼ teaspoon salt
- 2 egg whites
- 1½ teaspoon peppermint extract
- Red food coloring
- Cover 9x13 pan with cooking spray and powdered sugar (9x9 will also work, they will just be a bit thicker)
- Pour the cold water into a mixer then pour the unflavored gelatin on top and let it sit while you move onto the next step
- In a large saucepan, add sugar, corn syrup, hot water, and salt
- Cook on low, stirring until sugar is dissolved
- Up the temperature to medium and without stirring, keep it cooking until the candy thermometer reads 240 degrees
- Pour the sugar mixture into the gelatin, stir until dissolved
- Beat on high until the mixture turns bright white and expands in volume (about triple). This took my mixture about 5-7 minutes
- In a separate bowl, whist egg whites until it can hold stiff peaks
- Add eggs and peppermint extract into sugar mixture
- Beat until combined (but don't over-beat)
- Pour into pan and top with powdered sugar
- Add a few drops of red food coloring onto the top of the marshmallows, use a toothpick to swirl all around
- Place in the fridge overnight
- Cut around the edges of the pan to release the marshmallows then flip upside down onto a cookie sheet
- Cut in approximately 1" squares
- Add into a Rubbermaid container with powdered sugar and shake to cover the marshmallows
These marshmallows turned out absolutely delicious and I imagine we will make a few more batches throughout the winter. They are perfect to put in some hot chocolate, or even just to snack on for a sweet treat. I’m thinking that some of these will be coming with me to work so that I can enjoy them in some hot chocolate or a mocha for an afternoon pick-me-up.
These marshmallows have endless possibilities for flavors. Simply switch out the peppermint extract for other flavors such as vanilla, almond, orange, or chocolate. What flavor are you going to start with?
