I love the creaminess of mashed potatoes, and it isn’t a Thanksgiving meal without mashed sweet potatoes and little mini marshmallows roasted on top. Since Brad is allergic to dairy, I have to look for unique ways to add this creamy texture to my recipes. A couple years ago, I shared some creamy dairy-free mashed potatoes, and these have a similar method.
Earlier this year, we had a “pre-Thanksgiving” dinner with Kevin & Renee. It was a lot of fun, and a great way to kick off the holiday season (even if the holiday season wasn’t for a couple more months). I shared our Turkey brine a couple weeks ago, and today I have this delicious side dish.
- 4 large Sweet Potatoes, peeled and cut in quarters
- 2 teaspoons salt
- Water to Fill the Pot
- 4 Tablespoons Dairy Free Margarine
- 6 ounces Dairy Free Sour Cream (I use Tofutti brand)
- ½ Cup Brown Sugar
- 2 Tablespoons Ground Cinnamon
- 1 Tablespoon Ground Nutmeg
- 1 Bag Mini Marshmallows
- Fill a large pot with water
- Add in the salt and sweet potatoes
- Bring to a boil, and cook until they are easily pierced by a fork
- Once cooked, use a slotted spoon to transfer the potatoes into a stand mixer (with the whisk attachment)
- Whisk on low until the potatoes are broken up
- Add in the margarine, sour cream, and brown sugar
- Whisk until smooth
- Whisk in the ground cinnamon and nutmeg
- Pre-Heat the oven to 350*
- Spoon the potatoes into a sprayed baking dish
- Top with mini marshmallows
- Bake for 20-30 minutes, or until the marshmallows are golden brown
Everybody loved this casserole, and nobody noticed that it was dairy-free. It is perfectly creamy and absolutely delicious. Jaxson definitely enjoyed having some melted marshmallows as part of his dinner (as long as they didn’t touch any of his other food).
I’m looking forward to making this again as we get closer to Thanksgiving. This sweet potato casserole is great for more than just the Thanksgiving meal. It makes the perfect side dish to other holiday gettogethers and dinner parties. Plus, Brad is used to not being able to eat a lot of the side dishes at parties so this would be a nice addition to the meal.
I was a little sad when all the leftovers were gone. This sweet potato casserole was enjoyed so much during dinner, there were only a few helpings of it left. I’ll just have to make another batch soon to enjoy it again.
I always say that my favorite thing about Thanksgiving are the sides. This dairy free sweet potato casserole further solidifies that fact. Without a doubt this will be on our Thanksgiving table this year.
