Last year when we got an Air Fryer we used it multiple times a week to see how different foods would turn out if air fried. One of the favorite dishes I made were these egg rolls. Brad and I routinely would buy frozen egg rolls at Costco, but I had never tried making them myself before we got an Air Fryer.
With an Air Fryer, egg rolls are easy to make, and the fillings can include wherever your imagination takes you! The egg rolls are nice and crispy on the outside with a warm filling inside. Today’s variety is a Southwest Style Egg Roll!
These air fryer egg rolls are perfectly paired with the same Avocado Ranch dip that I made with the Air Fried Pickles.
We have the Philips Air Fryer XXL which has a huge basket. I could fit up to 6 egg rolls in the basket at one time. We enjoyed these as part of our dinner; however, they would also be great for party appetizers (especially for watching a football game, we love doing “air fryer parties” while watching sports with friends).
I did make the mistake of photographing these after the mixture had sat in the fridge for a few days. They still tasted amazing; however, the veggies got discolored from the canned black beans in the mixture.
When I was making the Avocado Dip, I wanted to make it so that Brad could enjoy as well. I used Tofutti Better Than Sour Cream, which is a dairy free Sour Cream alternative. I’ve used this ingredient multiple times in my creamy dairy free mashed potatoes, and I like that it still tastes like the real stuff.
