There is nothing better than a grilled cheese sandwich and some creamy tomato soup. In the past I would just grab a can of condensed soup and add some milk; but I was looking for a dairy free alternative (adding water isn’t the same).
Dairy Free Tomato Coconut Soup
- 4 pounds vine ripened tomatoes
- 1 Tablespoon olive oil
- 1 medium onion - chopped
- 1 Tablespoon minced garlic
- 2 Tablespoons sugar
- ¼ cup chopped basil
- 3 cups vegetable stock
- 1 Tablespoon salt
- 2 teaspoons ground pepper
- 1 can coconut milk (make sure to use the can, you want the higher fat content)
- 2 cups hemp milk
- Place the tomatoes in boiling water for 90 seconds and then directly into ice water for 90 seconds. After this blanching, the skin should peel right off.
- Heat the olive oil in a pan and then saute the onions and garlic for 10 minutes.
- In a large sauce pan, combine all of the remaining ingredients in addition to the tomatoes and sauteed onions. Simmer all of the ingredients for ½ hour or until the tomatoes are tender. Using both hemp and coconut milk gives the soup a creamy texture without it having an overpowering coconut flavor.
- Scoop in some of the mixture and puree on high until smooth (it took mine just about 10-15 seconds per "batch"). Remember that this liquid was just boiling so be careful filling the bowl of the food processor.
- To enjoy later, simply reheat over low until it is nice and warm. Top with some fresh basil and croutons.

Next, pull out your handy dandy food processor; I used the Cuisinart Elemental 8 and the Stainless steel chopping/mixing/dough blade. This recipe makes more than the food processor will hold so the next step needs to be run in batches.
Scoop in some of the mixture and puree on high until smooth (it took mine just about 10-15 seconds per “batch”). Remember that this liquid was just boiling so be careful filling the bowl of the food processor.
To enjoy later, simply reheat over low until it is nice and warm. Top with some fresh basil and croutons.
The Elemental 8 Food Processor was wonderful for this recipe. It pureed the soup fast and left it with a smooth finish.
There is a feeding tube that would be great for things like smoothies; but since I was working with extra hot liquids I opted not to use it for this recipe. The 350 watts are powerful enough to cut through tough vegetables. The Elemental 8 also comes with a couple shredding blades which would be perfect for salads or making my own shredded cheese.
The clean-up was super easy and all the parts are even dishwasher safe.
I’m looking forward to using the food processor more and making some of my own almond butter and salsa.

I just made this tonight. I even have the same food processor. Mine looks nothing like the picture. I’ve gone over the steps & ingredients repeatedly & the coconut milk will not blend with the vegetable stock. I’m not new to soups or cooking, so I’m thinking this recipe may just not be for the layman.

I think the recipe might not have worked for the person above because they might’ve used the coconut milk that comes in a carton and is similar to almond milk while you used the canned coconut milk which is more like coconut cream. I love cooking with coconut oil, but I’ve never tried cooking with coconut milk. I’m just wondering how much of a coconut taste it gives off (in some things, with coconut oil, the coconut taste is pretty strong) and how it would taste with tomatoes. Also, I’m not sure I’d want to peel that many tomatoes. So I’d probably used canned. Very interesting! Saving on Pinterest for later…just in case I start feeling brave. :-)

I don’t taste too much coconut (I’m not a huge coconut fan so I’d notice If there was a huge flavor) . Peeling thr tomatoes is REALLY easy when they are blanched.
