A couple months ago Brad and I went into Costco to look for a speaker amp. We didn’t find an amp; however, we did come home with a new Vitamix thanks to the roadshow happening. Since then, I’ve been making tons of smoothies in the morning for breakfast, and also finding other things to make with it. One thing I love about the Vitamix is how easy it is to blend ice into a perfect slushie consistency.
As fresh and local berries start coming into our local fruit stand, we have been picking up some full flats of these berries and freezing them as fast as we can. I used some of this frozen fruit in my delicious slushie cocktail.
Raspberry & Pineapple Slushie Cocktail
- 2 cups Frozen Raspberries
- 1 cup chopped Pineapple
- 3 ounces Raspberry Vodka
- In a blender, combine all ingredients.
- Blend until a smooth consistency
- If needed, add a tablespoon or two of water to give more liquid and help break up the frozen berries.
I loved how this slushie came out. It was absolutely delicious and there was plenty of sweetness from the berries without any added sugar. I absolutely love this pineapple cup too! I grabbed mine from Target, and they have now been clearanced out, but you can grab this similar one from Amazon.
