This month’s Spiked challenge was to use Bailey’s Irish Cream in a recipe that wasn’t a drink. My initial plan was to create French Macaroons; however, I am currently 0 for 2 on attempts so I might give up ever trying to bake them. Since the Macaroons didn’t turn out I opted for plan B: Doughnuts.
This Doughnut had Irish Cream in three different aspects: the doughnut itself, the filling and the glaze. Brad, the neighbors and I are going to have quite a few doughnuts to eat this coming week.
Irish Cream Doughnut
Ingredients:
- 2 Tablespoons white vinegar
- 1/2 cup milk
- 2 Tablespoons shortening
- 1/2 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 Tablespoon Bailey’s Irish Cream
- 2 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Oil for Deep Frying
Directions:
- Combine the vinegar and milk. Let stand for a couple minutes so that it thickens
- Cream together the shortening and sugar
- Beat in the egg, vanilla and Irish Cream
- Add the dry ingredients and milk mixture
- Roll out onto floured surface and cut with doughnut cutter (this one has a removable center hole part)
- Let doughnuts sit for 10 minutes
- Heat oil to 375 degrees (I used a deep fryer but this could also be done on the stove)
- Place dough into the oil and cook on each side for about 2 minutes each side or until golden brown
- Fill with filling (optional, recipe below) and top with glaze (recipe below)
Irish Cream Butterscotch Filling
Ingredients:
- 1 small box butterscotch instant putting
- 2 cups milk
- 1 Tablespoon Bailey’s Irish Cream
Directions:
- Add milk and Irish Cream into the pudding & whisk until smooth
- Allow to set for 5 minutes
- Use a pastry bag with filling tip to push the pudding into the doughnut
Irish Cream Doughnut Glaze
Ingredients:
- 2 cups powdered sugar
- 1/4 cup milk
- 1 Tablespoon Vanilla Extract
- 1 Tablespoon Bailey’s Irish Cream
Directions:
- Whisk together all ingredients
- Dip doughnut in glaze and let dry on a wire rack
