I love pudding, it is smooth, sweet and delicious. I don’t always have some in the pantry when my cravings hit so I started looking around to see if I could find a recipe to make it myself. I looked around the interwebs to figure out how to make my own. In addition to actually making pudding with this mix, it can also be used in recipes that call for pudding mix.
DIY Vanilla Bean Pudding Mix
- 1 cup sugar
- ¾ cup cornstarch
- ¾ cup dry milk powder
- 1 teaspoon salt
- Seeds from 4 vanilla beans
- Whisk together all of the above ingredients and store in an airtight container.
Note: This recipe actually fit between a pint and a quart jar, I used some of this in a recipe that will be featured next week.
To make the pudding – combine 1/2 cup of the above mix with 2 cups of milk. Whisk until it comes to a boil then reduce the heat to low and continue whisking 3-5 minutes until it thickens. When it is done, the pudding will coat the back of a spoon. Let cool in the fridge before serving.
I love the vanilla bean seeds mixed into it to give a real vanilla flavor. I’m already dreaming of soft velvety pudding and thinking of fun recipes to incorporate this pudding into. Next, I’m going to try other flavors like butterscotch (which is my absolute favorite).
