Happy September! As the summer draws to a close, the grill is used less, and the oven more, when we cook our nightly dinner. Throughout the summer we enjoy canning various fruits as it comes into season. Apricots are some of our favorites, and I’ve utilized these delicious canned apricots into the chicken recipe I’m sharing with you today.
Apricot & Balsamic Baked Chicken
- 1 package Foster Farms Simply Raised Fresh Chicken Breasts
- 1 can Canned Apricots
- 2 Tablespoons Olive Oil
- ⅓ Cup Balsamic Vinegar
- ¼ Cup Honey
- Preheat the oven to 350 degrees
- Place the chicken breasts in a single layer inside a baking dish
- Pour olive oil, balsamic vinegar, and honey evenly over breasts
- Top with canned apricots
- Bake for 20-30 minutes, or until cooked to an internal temperature of 165

Pair it with some fresh steamed broccoli and you have one amazing dinner!
Since this dinner took around 30 minutes to complete, it is perfect for weeknights when I want a quick and delicious dinner.
