Whenever I host family holidays I always ask my Aunt Evelyn to make her chocolate pie. It is absolutely delicious and features a meringue crust with a whipped filling. When planning my bridal shower, my best friend Meg asked everybody to come with a recipe to start my recipe box. Aunt Evelyn brought along this recipe and I made it for the first time this past weekend.

Chocolate Mousse Pie
After making this pie for the first time, I’m realizing that making it is an act of love :) It takes 3 hours to make and that doesn’t even count the hours that it has to cool in the fridge.
- Crust
- *2 egg white
- *1/4 teaspoon cream of tartar
- *1/4 teaspoon salt
- *1/2 cup sugar
- *1/4 teaspoon cinnamon
Filling - *6 ounces semisweet chocolate chips
- *1/4 cup water
- *2 egg yolks
- *1 cup whipping cream
- *1/4 cup sugar
- *1/4 teaspoon cinnamon
- Crust
- Beat egg whites, cream of tartar and salt until peaks form
- Add sugar one Tablespoon at a time, beating for one minute between additions
- Add in cinnamon and beat for 2 more minutes
- Spread into a well greased and floured pie tin (use GF flour if going for a gluten free pie).
- Bake at 250 degrees for one hour
- Turn off oven, leave the crust in for one more hour.
Filling - Melt chocolate chips with ¼ cup of water in a sauce pan
- Remove from heat and add egg yokes (slightly beaten and membrane removed)
- Spread about ⅓ of chocolate mixture on pie crust
- Beat whipping cream, sugar and cinnamon
- Mix in the remaining chocolate
- Spread into pie
- Refrigerate for approximately 2 hours or until chocolate reaches a mousse consistency.
The chocolate mousse is rich and creamy while the meringue gives a nice crunch to this amazing dessert.
I ended up making two of these pies, I brought one to work and the other went over to Kevin & Renee. I definitely owed Kevin after he had signed for a few of my FedEx packages so that I didn’t need to go pick them up from the office. I needed to make sure that I got these pies out of the house because otherwise I would have eaten both of them in just a few days – it really is that amazing.
