It has been quite the summer here in the Darr household. This spring, we figured it would be full of home projects and hoping to finish our kitchen/living room remodel by the end of the season. All that changed at the end of June when Emmett joined our family. Parts of the remodel sped up (such as getting a dishwasher and kitchen sink) and other parts slowed a bit (mostly the finish work such as painting).
Summer has seemed to come and go quickly this year as it was so full of figuring out our new life; however, it was 100% worth it.
One thing that remained this summer from years past is our love of grilling. For a good portion of the season, we didn’t have a stove available so the grill was our main cooking mechanism. We grill a lot of main and side dishes throughout the year; however, we haven’t done a lot of desserts in the past.
Last week, Brad and I were walking around our local farmers market and saw some delicious berries. We love crisps, and these berries looked like the perfect ingredient.
I didn’t want to do just any crisp, but make personal crisps on the grill! I make a lot of crisps and can basically do it in my sleep. For these, I had to think through a bit more because normally I’m making a large crisp that will fill a 9×13 pan (and half the time the fruit is coming out of our freezer).
Cooking on a grill is a different experience than baking a crisp in the oven; however, the premise is the same. With the lid of the grill closed, the grill will thoroughly heat the cast iron skillets and bake the crisp. Make sure to be very careful handling the cast iron skillets because they are going to be super hot (and maintain this heat for quite a while).
These personal berry crisps are the perfect dessert to pair with CK Mondavi Sweet Sunset Red wine. The Sweet Sunset Red wine has flavors of strawberries and plums which pairs so well with the other summer fruits of the crisp. This wine is also very smooth and full of fruit flavors.
- 1 Pint of fresh mixed berries
- 1 teaspoon Cinnamon
- ½ teaspoon Nutmeg
- 1 teaspoon white sugar
- ¼ cup Oats
- 1.5 Tablespoons White Flour
- 2 Tablespoons Brown Sugar
- 1 teaspoon Cinnamon
- 2 Tablespoons Butter
- In a bowl, stir together the berries, cinnamon, nutmeg, and sugar
- In a separate bowl, mix in all the topping dry ingredients
- Cut in the butter, then use a pastry blender to combine the butter and dry ingredients
- Coat the miniature cast iron skillets with butter
- Separate the berries into the skillets
- Top with the topping
- Heat the grill to 350 degrees
- Place the individual skillets onto the grill and cook until the berries are hot and the topping is golden brown.
This dessert and wine pairing is perfect for enjoying out on the deck while we say goodbye to an amazing summer. So make yourself a delicious dessert, grab a glass of wine, and send summer off yourself!
