We are supposed to have a couple 80 degree days this week and I cannot be more excited. To me, 75-80 is the perfect temperature outside. With the warmer temperatures, a summer salad is in order. My neighbor makes this avocado salad all the time and decided it was time for me to try my hand at it. I have a feeling this is going to be a staple in our fridge for the next few months.

This Avocado Salad is absolutely delicious and perfect for your summer BBQs.

Ingredients
- 2 cans (15 oz) Black Beans
- 2 cans (15 oz) Corn
- 1 T Minced Garlic
- ½ red onion - diced
- 2 red peppers - diced
- 1 teaspoon salt
- 2 Tablespoon sugar
- ¼ cup Olive Oil
- ¼ cup Lime Juice
- ½ cup chopped cilantro
- 2 Avocados - diced
Instructions
- Mix all of the ingredients except for the avocados in a large bowl. Stir in the avocados last. Store in the fridge, it can be eaten right away but is best to marinate for a couple hours.
It can be eaten plain or enjoyed with chips. I find that tortilla chips and Fritos work well.
