I am so excited that it seems as though Summer is approaching. We’ve been having a very “summer-like” spring this year so we’ve been grilling a lot of dinners. One night I decided that I needed a good summer staple salad for this year and put together this delicious Tropical inspired pasta salad.

This pasta salad was ABSOLUTELY AMAZINGLY DELICIOUS! I’m not even joking. Before this batch was even finished it had already been requested to be made again for the following weekend.
I really like how the fruit adds both a little bit of sweetness and some different textures into the pasta salad.
Plus it is kinda pretty looking before everything gets mixed into the pasta.

It was absolutely delish!! Thanks for a great idea that I’ll definitely use again – hopefully next time with the actual kale and bacon. 🙂 One question – is the nutrition info at the end meant for one serving or all four? The carb count seems high for a single serving, given that a whole large sweet potato has around 40 carbs. But if I’ve miscounted somewhere, please let me know. Thanks again!
