It will be interesting to see how this summer plays out here in the Seattle area. Our state was scheduled to enter Phase 2 of re-opening in a few days, but it is looking like our county will be postponed. If we get a chance to host a BBQ this summer, I’d definitely make this Watermelon Slush Cocktail.

This summer we’ve been focusing on updating our backyard. Brad thatched and re-seeded the grass, we added some beauty bark to a few areas, and now we’re getting ready to haul 30 yards of play chips into the area that will sit under the swing set. It would have been the perfect background for Emmett’s first birthday party next month, but we’re working on alternate plans for now.

Serving the watermelon slush cocktail out of the actual watermelon is a fun twist for any party. Garnishing with fresh mint, edible flowers, and a slice of watermelon make the perfect finishing touches to the cocktail.

Fortunately, emptying out a watermelon is pretty easy as the watermelon flesh is so soft. The Watermelon Keg Tap was easy to install, and then we placed it into a pot for stability, and to give the tap a bit of height for the glass to slide underneath.

Ingredients: 1 Medium Sized Watermelon; 24 Ounces Lemonade, Divided; 16 Ounces Smirnoff Watermelon Mint; 8 Ounces Triple Sec

Ingredients

1 Medium Sized Watermelon
24 Ounces Lemonade, Divided
16 Ounces Smirnoff Watermelon Mint
8 Ounces Triple Sec

Instructions

Use a large knife to cut the top off off of the watermelon, approximately 2-3" down
Scoop out the insides and place in the blender
Add 8 ounces of lemonade and blend until pureed. If needed, add 1 more ounce at a time until smooth
Stir in remaining ingredients
Insert the Watermelon Keg tap into watermelon, and place into a stand (or flower pot)
Pour the cocktail mixture into the watermelon and place the top back on
Serve through the tap and enjoy!
