Happy September! As the summer draws to a close, the grill is used less, and the oven more, when we cook our nightly dinner. Throughout the summer we enjoy canning various fruits as it comes into season. Apricots are some of our favorites, and I’ve utilized these delicious canned apricots into the chicken recipe I’m sharing with you today.
Apricot & Balsamic Baked Chicken
- 1 package Foster Farms Simply Raised Fresh Chicken Breasts
- 1 can Canned Apricots
- 2 Tablespoons Olive Oil
- ⅓ Cup Balsamic Vinegar
- ¼ Cup Honey
- Preheat the oven to 350 degrees
- Place the chicken breasts in a single layer inside a baking dish
- Pour olive oil, balsamic vinegar, and honey evenly over breasts
- Top with canned apricots
- Bake for 20-30 minutes, or until cooked to an internal temperature of 165
This baked Foster Farms Simply Raised Fresh Chicken is absolutely delicious and super moist.
Foster Farms Simply Raised Fresh Chicken is local here in the Pacific Northwest; they partner with local farms to make sure that it is less than 48 hours old when it reaches the store; plus they are American Humane Certified.
I like to use their thin slice breasts for baked chicken recipes as it cooks evenly (and a little faster) for those nights when I want to eat ASAP and don’t have time to wait for an intricate dinner to cook.
Foster Farms is realizing that there is a new trend in traditional “comfort food” – they are healthier, contain more basic ingredients, and are fast to prepare. They have named this “New Comfort Food”, and this Apricot & Balsamic Baked Chicken is my own “New Comfort Food”. This Apricot & Balsamic Baked chicken is perfect for a night when you need a little “comfort food”, it has robust flavors from the honey, balsamic vinegar, and apricot which combine to make a delicious dish. Pair it with some fresh steamed broccoli and you have one amazing dinner!
Since this dinner took around 30 minutes to complete, it is perfect for weeknights when I want a quick and delicious dinner.
Do you have a go-to weeknight dinner?

Sounds great! Just two questions: About how much does a package of the chicken weight? Do you use breasts or thighs?
