Rhubarb is one of my favorite summer fruits. It is sour on its own but can be paired with other sweet fruits for delicious recipes. For the past couple years, I’ve made Rhubarb Vodka which is absolutely delicious and perfect for cocktails.
Rhubarb Fizz Cocktail
- 2 oz Rhubarb Vodka
- ½ oz Strawberry Juice (I found it in the health foods section)
- 3 oz Rhubarb Soda (I used Dry soda brand)
- In a glass, stir together the rhubarb vodka and strawberry juice
- Top with Rhubarb Soda
- The rhubarb can be a very strong flavor, if you would like it sweeter add a little bit of simple syrup.
I loved this cocktail, it had a great mix of sweet and sour components. Plus it is light and refreshing which is a perfect for summer.
Brad and I planted a few rhubarb plants in our garden about 4 years ago and I can’t wait until they are producing nice large stalks. Rhubarb can’t be harvested the first 2 years after it has been planted so it has really only been producing for a couple years now. I imagine as the plant gets older we will get some larger stalks.
I will definitely be making a few more of these rhubarb fizz cocktails through the rest of the summer. Here in Seattle our summer generally lasts well into September so we have lots of time to enjoy fruity and summery cocktails.
